Wash and dry all produce. Peel, halve, and thinly slice @red onion{1%unit}. Mince a few slices until you have 2 TBSP minced onion. Core, seed, and thinly slice @yellow bell peppers{1%unit} and @green bell pepper{1%unit}. Core, then finely chop @roma tomatoes{2%unit}. Finely chop @cilantro{¼%oz}. Cut @lime{1%unit} in half; cut one half into wedges.

In a #large pan{} over medium-high heat, heat a large drizzle of @olive oil{5%tsp}. Add the sliced onion and bell peppers; season with @salt{} and @black pepper{}. Cook, tossing occasionally, until softened and charred in spots, ~{10%minutes}. Remove from pan and set aside.

In a medium bowl, combine the tomatoes, half the cilantro, and the minced onion. Juice the lime half and add the juice, then a drizzle of olive oil. Season with salt and pepper.

Pat @beef stir-fry{20%oz} dry with @paper towels{}. Heat a large drizzle of olive oil in the pan used for veggies over medium-high heat. Add the beef and season with @fajita spice blend{2%tbsp}, salt, and pepper. Cook, tossing occasionally, until browned and cooked to your preference, ~{3%minutes}.

Wrap @flour tortillas{12%unit} in a damp paper towel and microwave on high until warm, about ~{30%seconds}. Alternatively, wrap tortillas in foil and warm in oven for 5 minutes at 400°F.

Fill tortillas with @cheddar cheese{1%cup}, then top each with the beef, veggies, and salsa. Dollop with @sour cream{4%tbsp} and sprinkle with remaining cilantro. Serve with lime wedges for squeezing over.
